Ingredients:
- 1 zucchini
- Canola oil
- 1 cup rye flour
- 1-2 teaspoons salt
- Ground black pepper
- 2 eggs
For the Pepper Sauce:
- 1 cup heavy cream
- 3.5 oz butter
- 3-6 teaspoons ground black pepper
- Salt
For Garnish:
- Wild garlic leaves
- Slices of rye bread
Instructions:
1. Slice the zucchini into rounds. Dip the slices in canola oil and let the excess oil drain off. Mix the rye flour, salt, and ground black pepper. Coat the oiled zucchini slices in the flour mixture. Place the breaded slices on a baking sheet and grill until golden brown.
2. Boil two eggs. After boiling, place them in cold water.
3. In a saucepan, combine the heavy cream and butter. Heat until boiling. Add ground black pepper and salt. Let it simmer gently for about 15 minutes until the sauce thickens.
4. Peel and slice the boiled eggs.
5. Arrange the breaded zucchini and egg slices in a line. Spoon the pepper sauce over them. Garnish with wild garlic leaves and rye bread slices!
