Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta, diced
- 3 eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, minced
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, fry the bacon or pancetta in a large skillet over medium heat until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it and reserve a little pasta water. Add the pasta to the skillet with the bacon.
5. Remove the skillet from heat and quickly mix in the egg mixture with the pasta to cook the eggs gently without scrambling. Add reserved pasta water as needed to achieve the desired consistency.
6. Serve immediately, garnished with fresh parsley if desired.
