A delicious vegetarian twist on the classic carbonara, perfect for a quick and satisfying meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g spaghetti
- 1-2 yellow onions
- ½ dl soy strips with bacon flavor
- Butter or margarine for frying
- A splash of apple juice or white wine
Instructions:
1. Cook the spaghetti according to package instructions in salted water. Drain and reserve a little cooking water.
2. Peel and chop the yellow onions.
3. Heat a pan, add butter or margarine, and sauté the onions until they are soft.
4. Add the soy strips to the pan and cook until they are golden brown.
5. Pour a splash of apple juice or white wine into the pan and let it evaporate for a moment.
6. Combine the cooked spaghetti with the onion mixture and soy strips in the pan. Mix well.
7. If needed, add a little reserved cooking water to make the mixture creamier.
8. Serve immediately and enjoy your delicious veggie carbonara!
