A classic Italian dish that combines the richness of eggs and cheese with crispy pancetta for a deliciously creamy sauce. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 1 clove garlic
- 30 g pecorino cheese
- 80 g pasta
- 50 g bacon/gancialea/pancetta
- Black pepper
- Sea salt
- Olive oil
- 2 eggs
- 30 g parmesan cheese
Instructions:
1. Cook the pasta in salted water according to package instructions.
2. Thinly slice the garlic.
3. In a pan, cook the bacon or pancetta in olive oil until crispy. Add the garlic and sauté for a short time.
4. In a bowl, whisk together the whole egg and egg yolk. Stir in the grated pecorino cheese until well combined.
5. Once the pasta is cooked, drain it while reserving a little cooking water.
6. Add the pasta to the pan with the bacon mixture and stir. Remove the pan from heat.
7. Quickly add the egg mixture to the pasta and stir vigorously. If needed, add a little reserved cooking water to create a creamy sauce.
8. Season with black pepper and sea salt to taste.
9. Serve with freshly grated parmesan cheese on top. Enjoy!
