Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g pancetta or guanciale
- 3 eggs
- 100 g pecorino cheese (grated)
- Salt
- Black pepper
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Chop the pancetta or guanciale into small pieces and fry in a pan until crispy.
3. In a bowl, crack the eggs and add the grated pecorino cheese. Mix well.
4. Once the pasta is cooked, drain it, reserving a little pasta water.
5. Add the hot pasta to the pan with the pancetta and combine.
6. Remove the pan from heat and pour the egg mixture over the pasta, stirring quickly to lightly cook the eggs.
7. If necessary, add reserved pasta water to create a creamy sauce. Season with black pepper.
8. Serve immediately and enjoy!
