Ingredients:

- 250 g black pasta
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 1 garlic clove (minced)
- Salt and black pepper to taste
- Fresh parsley (for garnish)
- Water (for cooking pasta)

Instructions:

1. Cook the black pasta in salted water according to package instructions. Drain, reserving a little pasta water.
2. In a pan, cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Stir in the cooked bacon and garlic.
4. Combine the pasta with the egg mixture and mix well. If needed, add a little reserved pasta water to create a creamy texture.
5. Season with salt and black pepper to taste.
6. Prepare poached eggs and place them on top of the pasta.
7. Garnish with fresh parsley and serve immediately.
