A classic Italian dish made with spaghetti, guanciale, and a creamy egg and cheese sauce. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400 g spaghetti
- 150 g guanciale (or pancetta)
- 3 eggs
- 100 g grated Parmesan cheese
- 1 garlic clove (optional)
- Salt
- Black pepper
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water until al dente.
2. Cut the guanciale into small cubes and cook in a skillet over medium heat until crispy.
3. If using garlic, add it to the skillet with the guanciale and sauté quickly, being careful not to burn it.
4. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper.
5. Once the pasta is cooked, reserve a bit of the cooking water, then drain the pasta.
6. Add the hot pasta to the skillet with the guanciale and mix well.
7. Remove the skillet from the heat and quickly stir in the egg mixture, ensuring the eggs do not scramble.
8. If needed, add a little reserved pasta water to achieve a creamy consistency.
9. Serve immediately with freshly cracked black pepper and additional Parmesan cheese if desired.
