Ingredients:

- 4 large chicken thigh and drumstick pieces
- 1 tsp black pepper, ground
- 1 tsp salt
- 250 g shallots
- 2 large tomatoes
- 2 dl chicken broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 bay leaf

Instructions:

1. Season the chicken pieces with salt and black pepper.
2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on all sides.
3. Peel and slice the shallots. Add them to the skillet and sauté for a few minutes.
4. Peel and dice the tomatoes. Add them to the skillet and mix well.
5. Pour the chicken broth over the mixture and add thyme and bay leaf. Bring to a boil, reduce the heat, and let it simmer covered for about 30-40 minutes, until the chicken is cooked through.
6. Remove the bay leaf before serving and enjoy the stew with rice or fresh bread.
