Creamy Whole Wheat Pasta with Vegetables

Ingredients:
- 250 g whole wheat pasta - 200 ml cooking cream
- 1 medium onion, chopped
- 2 garlic cloves, crushed
- 150 g fresh mushrooms, sliced
- 1 bell pepper, diced
- 100 g peas (fresh or frozen)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and save a little cooking water. 2. Heat olive oil in a frying pan over medium heat. Add the chopped onion and crushed garlic, sauté until soft.
3. Add the mushrooms and bell pepper to the pan, cooking for about 5 minutes until tender.
4. Pour the cooking cream into the pan and mix well. Allow the sauce to simmer on low heat for about 5-7 minutes.
5. Stir in the peas and cooked pasta to the sauce. Mix well, adding a bit of saved cooking water if the sauce is too thick.
6. Season with salt and pepper. Serve garnished with fresh basil or parsley.
