A colorful and delicious vegetable pasta dish. Perfect for a quick and healthy meal! Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g. spaghetti or fusilli)
- 200 g fresh asparagus
- 150 g mushrooms
- 1 bell pepper (preferably green or yellow)
- 1 small zucchini
- 2 garlic cloves
- 3 tbsp olive oil
- 100 ml cream (or plant-based cream)
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water.
2. Cut the asparagus, mushrooms, bell pepper, and zucchini into small pieces.
3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for a moment.
4. Add the vegetables to the skillet and sauté for about 5-7 minutes until tender but still crisp.
5. Pour the cream into the skillet with the vegetables and mix well. Season with salt and pepper.
6. Drain the cooked pasta and combine it with the vegetable and cream mixture.
7. Serve the pasta topped with fresh basil and grated Parmesan cheese, if desired. Enjoy!
