A delicious and colorful pasta dish featuring fresh vegetables and a light sauce, perfect for summer days and quick to prepare. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g. spaghetti or fusilli) - 1 bell pepper (preferably red or yellow)
- 1 zucchini
- 1 carrot
- 150 g cherry tomatoes
- 2 garlic cloves
- 3 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water. 2. Slice the bell pepper, zucchini, and carrot into strips. Halve the cherry tomatoes.
3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for a moment.
4. Add the vegetables to the skillet and sauté for about 5-7 minutes until they are soft but still crisp.
5. Toss the cooked pasta with the vegetables. Add a little reserved cooking water if needed to prevent the pasta from drying out.
6. Season with salt and pepper. Mix well.
7. Serve garnished with fresh basil and grated Parmesan cheese if desired.
