A quick and easy vegetable pasta perfect for a weeknight dinner, packed with flavor and color to satisfy your hunger. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, cooking until softened.
3. Add the bell pepper and zucchini, continuing to cook for about 5 minutes, until the vegetables are slightly tender.
4. Stir in the cherry tomatoes, basil, salt, and black pepper. Cook for an additional 3-4 minutes.
5. Combine the cooked pasta with the vegetables. Mix well and add reserved cooking water as needed to keep the pasta moist.
6. Serve with grated Parmesan cheese and fresh basil if desired.
