Ingredients:
- 2 cups cooked and mashed potatoes
- 1 cup grated carrots
- 1 cup finely chopped red bell pepper
- 1/2 cup finely chopped onion
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika powder
- 1/2 tsp garlic powder
- Oil for frying
Instructions:
1. In a bowl, combine the mashed potatoes, grated carrots, red bell pepper, onion, breadcrumbs, and parsley.
2. Season the mixture with salt, black pepper, paprika powder, and garlic powder. Mix well.
3. Shape the mixture into evenly-sized patties.
4. Heat oil in a frying pan over medium heat.
5. Fry the patties for about 5-7 minutes on each side until golden brown.
6. Transfer the fried patties to a paper towel to absorb excess oil.
7. Serve warm, accompanied by a salad or yogurt sauce.
