Ingredients:
- 1 cup cooked quinoa - 2 cups chopped broccoli
- 150 g grated halloumi
- 1/2 cup all-purpose flour
- 2 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano
- 2 tbsp olive oil for frying
Instructions:
1. Cook quinoa according to package instructions and allow it to cool. 2. Steam broccoli until tender, then lightly mash it with a fork.
3. In a bowl, combine cooked quinoa, broccoli, grated halloumi, flour, eggs, salt, black pepper, and oregano. Mix well.
4. Form the mixture into small patties.
5. Heat olive oil in a skillet over medium heat and fry the patties for about 3-4 minutes on each side until golden brown.
6. Serve warm with a yogurt sauce or a salad.
