A delicious quinoa vegetable bowl that's perfect for a light lunch or dinner. Made with organic Finnish quinoa for a special flavor. Preparation time is about 30 minutes, serving size is 2-4.
Ingredients:
- 1 cup Finnish organic quinoa
- 2 cups water
- 1 small red onion, chopped
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
1. Rinse the quinoa thoroughly under cold water.
2. Cook the quinoa in water for about 15 minutes, or until the water is absorbed and the quinoa is tender.
3. Sauté the onion in olive oil in a pan over medium heat for 3-4 minutes.
4. Add the bell pepper and zucchini to the pan and cook for another 5 minutes until the vegetables are soft.
5. Stir in the cherry tomatoes and cooked quinoa, mixing well.
6. Season the mixture with salt, pepper, and lemon juice.
7. Serve in bowls and top with sliced avocado and fresh herbs.
8. Enjoy immediately!
