A delicious and satisfying alternative to traditional sushi, this sushi bowl is packed with flavor and colorful ingredients, making it perfect for a weekday dinner.

Ingredients:

- 200 g sushi rice
- 300 ml water
- 150 g fresh salmon
- 1 avocado
- 1 cucumber
- 1 carrot
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame seeds
- Fresh cilantro or chives for garnish
- Wasabi and pickled ginger for serving (optional)

Instructions:

1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice in water according to package instructions.
2. Once the rice is cooked, mix in the rice vinegar and allow it to cool.
3. Slice the salmon, avocado, cucumber, and carrot into strips or cubes.
4. Divide the cooled rice between two bowls.
5. Artfully arrange the salmon, avocado, cucumber, and carrot on top of the rice.
6. Drizzle soy sauce over the top and sprinkle with sesame seeds.
7. Garnish with fresh cilantro or chives.
8. Serve with wasabi and pickled ginger if desired.
