A delightful and healthy vegan alternative to traditional sushi rolls, packed with fresh vegetables and flavor. Preparation Time: 30 minutes
Serving Size: 4 rolls
Ingredients:
- 2 dl sushi or jasmine rice
- 2.5 dl water
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 4 nori sheets
- 1 avocado
- 1 cucumber
- 1 carrot
- 1/2 bell pepper
- Soy sauce for serving
- Wasabi and ginger (optional)
Instructions:
1. Rinse the rice under cold water until the water runs clear. Cook the rice in water for about 15-20 minutes until tender.
2. In a small bowl, mix rice vinegar, sugar, and salt. Heat the mixture in the microwave or on the stove until the sugar dissolves.
3. Pour the vinegar mixture over the cooked rice and stir gently. Allow it to cool to room temperature.
4. Slice the avocado, cucumber, carrot, and bell pepper into thin strips.
5. Place a nori sheet on a bamboo mat or clean cutting board. Spread a thin layer of rice over the nori sheet.
6. Arrange the vegetable strips on top of the rice and roll the nori tightly into a log.
7. Cut the roll into slices with a sharp knife and serve with soy sauce, wasabi, and ginger if desired.
