A delicious and refreshing bowl featuring sushi rice topped with tuna, avocado, and fresh vegetables. Perfect for a light lunch or dinner!Preparation Time: 30 minutes
Serving Size: 2 servings
Ingredients:
- 1 cup sushi rice
- 2 cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 200 g tuna (canned or fresh)
- 1 avocado
- 1/2 cucumber
- 1/4 red onion
- 1 tablespoon soy sauce
- 1 tablespoon sesame seeds
- Fresh cilantro or chives for garnish
Instructions:
1. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Once boiling, reduce the heat and cover the pot. Let it simmer on low for about 15 minutes.
2. After the rice is cooked, remove it from the heat and let it sit covered for another 10 minutes.
3. In a small bowl, mix the rice vinegar, sugar, and salt until the sugar dissolves. Gently fold this mixture into the cooked rice.
4. Slice the avocado, cucumber, and red onion into thin strips.
5. Spoon the rice into bowls. Top with tuna, avocado, cucumber, and red onion.
6. Drizzle soy sauce over the top and sprinkle with sesame seeds.
7. Garnish with fresh cilantro or chives. Serve immediately.
