A delicious and nutritious taco bowl featuring plant-based protein, fresh vegetables, and a zesty dressing. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200 g Härkis
- 1 avocado
- 1 red bell pepper
- 1 small red onion
- 100 g cherry tomatoes
- 1 dl corn
- 1 dl black beans (canned)
- 2 dl mixed salad greens
- 2 tbsp olive oil
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions:
1. Prepare Härkis according to the package instructions and season with salt and pepper.
2. Dice the avocado, red bell pepper, and red onion into small cubes.
3. Cut the cherry tomatoes in half.
4. In a bowl, mix olive oil, lime juice, salt, and pepper.
5. Add the mixed salad greens, corn, black beans, Härkis, and diced vegetables to the bowl. Toss well to combine.
6. Serve the mixture beautifully in bowls and garnish with fresh cilantro if desired.
