A delicious plant-based burrito that even meat lovers will enjoy. Full of flavor and nutrients, this dish is perfect for both everyday meals and special occasions. Preparation Time: 30 minutes
Serving Size: 4 burritos
Ingredients:
- 200 g Härkis
- 4 large tortillas
- 1 red bell pepper, chopped
- 1 small red onion, finely chopped
- 1 avocado, sliced
- 1 cup corn (fresh or frozen)
- 1 cup black beans, rinsed
- 1 tsp chili powder (to taste)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro (optional)
- Lime wedges for serving
Instructions:
1. Heat olive oil in a frying pan over medium heat.
2. Add red onion and bell pepper to the pan, sauté until softened (about 5 minutes).
3. Stir in Härkis, corn, black beans, and chili powder. Cook for an additional 5-7 minutes, until all ingredients are well combined and heated through. Season with salt and pepper.
4. Remove from heat and let cool for a moment.
5. Warm tortillas lightly in a frying pan or microwave.
6. Place about 1/4 of the Härkis mixture in the center of each tortilla, add sliced avocado and fresh cilantro if using.
7. Fold in the edges of the tortilla and roll it tightly to form a burrito.
8. Serve with lime wedges on the side.
