A hearty, healthy, and delicious dish, perfect for both everyday meals and special occasions. Preparation time is about 45 minutes, serving size is for 4.Ingredients:
- 400 g Härkis (plant-based protein)- 2 large sweet potatoes
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl vegetable broth
- 2 tbsp olive oil
- 100 g grated cheese (e.g., cheddar or mozzarella)
Instructions:
1. Peel and dice the sweet potatoes. Boil them in salted water for about 10 minutes until just tender. Drain and set aside.2. Peel and finely chop the onion and garlic. Heat olive oil in a skillet and sauté the onion and garlic until soft.
3. Add the diced bell pepper and Härkis to the skillet. Cook, stirring, for about 5 minutes.
4. Season the mixture with paprika, salt, and black pepper. Pour in the vegetable broth and mix well.
5. Grease a baking dish and spread the boiled sweet potato cubes at the bottom. Pour the Härkis mixture on top.
6. Sprinkle grated cheese over the casserole.
7. Bake at 200°C (400°F) for about 20 minutes, until the cheese is melted and nicely browned.
