Härkis Flatbread with Mint Yogurt Sauce and Quick Pickled Red Onion

A delicious vegetarian dish featuring Härkis, fresh cabbage, and a refreshing mint yogurt sauce. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 4-6 flatbreads- 200 g Härkis
- 1 spring cabbage
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 dl yogurt
- 1/2 dl fresh mint, chopped
- 1 large red onion
- 2 tbsp red wine vinegar
- 1 tbsp sugar
- 1 dl water
Instructions:
1. Chop the spring cabbage and sauté it in olive oil in a pan until it softens.2. Add Härkis to the cabbage and cook the mixture for a few minutes. Season with salt and pepper.
3. Prepare the mint yogurt sauce by mixing yogurt, chopped mint, and seasoning with salt.
4. For the pickled red onion, slice the onion and mix it with red wine vinegar, sugar, and water. Let it marinate for about 15 minutes.
5. Fill the flatbreads with the Härkis and cabbage mixture, mint yogurt sauce, and pickled red onion.
6. If desired, lightly grill the flatbreads before serving.
7. Serve immediately and enjoy your summer meal!
