Ingredients:
- 4 medium potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (e.g., cheddar)
- 2 tablespoons fresh herbs (e.g., parsley or chives)
Instructions:
1. Peel and dice the potatoes into cubes.
2. Boil the potato cubes in salted water for about 10-15 minutes, until tender.
3. Drain the potatoes and return them to the pot.
4. Add olive oil, salt, and black pepper to the potatoes, and mix well.
5. Preheat the oven to 200°C (400°F).
6. Transfer the potato mixture to a baking dish and sprinkle the shredded cheese on top.
