Ingredients:
- 500 g purple potatoes
- 50 g butter
- 1 dl milk
- Salt to taste
- Black pepper to taste
- Fresh herbs (e.g. parsley) for garnish
Instructions:
1. Peel the purple potatoes and cut them into evenly sized pieces.
2. Boil the potatoes in salted water for about 15-20 minutes, until soft.
3. Drain the cooked potatoes and transfer them to a large bowl.
4. Add the butter and milk to the potatoes.
5. Mash the potatoes until smooth using a potato masher or fork.
6. Season with salt and black pepper to taste.
7. Serve the mash warm, garnished with fresh herbs.
