Ingredients:
- 200 g dark chocolate
- 3 eggs
- 1 tablespoon sugar
- 200 ml heavy cream
- A pinch of salt
- Vanilla sugar (optional)
Instructions:
1. Melt the dark chocolate in a water bath or microwave and let it cool slightly.
2. Separate the egg whites from the yolks. Whip the egg whites with a pinch of salt until stiff peaks form.
3. In another bowl, whisk the egg yolks with sugar and vanilla sugar until the mixture is pale and fluffy.
4. Fold the melted chocolate into the egg yolk mixture until well combined.
5. Gently fold in the whipped cream into the chocolate mixture to keep it airy.
6. Finally, carefully fold in the whipped egg whites until fully incorporated.
7. Spoon the mousse into serving bowls and refrigerate for at least 2 hours before serving.
8. Optionally, top with chocolate shavings or berries before serving.
