A moist chocolate cake filled with mint chocolate mousse and strawberry mousse, perfect for celebrating Independence Day! Preparation Time: 2 hours + cooling time
Serving Size: 10 servings
Ingredients:
- 200 g dark chocolate - 150 g butter
- 250 g sugar
- 4 eggs
- 150 g all-purpose flour
- 1 tsp baking powder
- 1/2 dl milk
Mint Chocolate Mousse:
- 200 ml heavy cream
- 100 g mint chocolate
- 1 tbsp sugar
- 2 gelatin sheets
Strawberry Mousse:
- 200 ml heavy cream
- 200 g fresh strawberries
- 1 tbsp sugar
- 2 gelatin sheets
Instructions:
1. Melt the chocolate and butter together in a double boiler. Mix well and let it cool. 2. Whisk the sugar and eggs until light and fluffy. Add the chocolate mixture to this.
3. In a separate bowl, combine the flour and baking powder, then gradually add it to the batter along with the milk.
4. Pour the batter into a greased cake pan and bake at 175 °C (350 °F) for about 30-35 minutes. Let it cool.
5. Prepare the mint chocolate mousse: Whip the cream and mix in the melted mint chocolate. Soak the gelatin sheets in water, melt them, and add to the mousse.
6. Prepare the strawberry mousse similarly: Whip the cream, blend the strawberries, and mix in the sugar. Add the soaked gelatin sheets.
7. Once the cake has cooled, slice it into three layers. Fill the cake alternately with mint chocolate mousse and strawberry mousse.
8. Decorate the cake with colors of the Finnish flag and optionally add silver leaves for extra flair.
