These delicious sweet potato burgers are a perfect alternative to traditional burgers. They are packed with flavor and nutrients, making them great for any occasion. Preparation Time: 30 minutes
Serving Size: 4 burgers
Ingredients:
- 2 medium sweet potatoes
- 1 cup oats
- 1 cup black beans (cooked)
- 1 onion
- 2 garlic cloves
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 burger buns
- Lettuce and vegetables for topping
Instructions:
1. Peel and boil the sweet potatoes until soft, about 15-20 minutes.
2. Drain and mash the sweet potatoes in a bowl.
3. Finely chop the onion and garlic, then sauté them in a pan until soft.
4. Add the sautéed onions and black beans to the sweet potato mixture.
5. Stir in oats, cumin, smoked paprika, salt, and pepper. Mix well.
6. Form the mixture into four patties.
7. Cook the patties on a skillet over medium heat for about 5 minutes on each side until golden brown.
8. Assemble the burgers in buns with lettuce and vegetables.
