These delicious quinoa-cauliflower patties are packed with flavor and nutrients. They make an excellent vegetarian dish and are easy to prepare.

Ingredients:

- 1 cup quinoa
- 1 small cauliflower, chopped
- 1/2 cup chopped kale
- 1/2 cup chopped fresh parsley
- 1/2 cup flour (e.g., oat or wheat flour)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
- 1/2 tsp baking powder
- 1/4 cup water

Instructions:

1. Cook quinoa according to package instructions and let it cool.
2. Steam the cauliflower until soft and blend it into a smooth puree.
3. In a bowl, combine the cooked quinoa, pureed cauliflower, kale, parsley, flour, salt, black pepper, paprika, baking powder, and water.
4. Shape the mixture into patties.
5. Heat olive oil in a skillet over medium heat.
6. Fry the patties for about 3-4 minutes on each side until golden brown.
7. Serve warm with salad or dipping sauce.
