Summer Quinoa Salad

Ingredients:
- 1 dl quinoa
- 2 dl water
- 1 cucumber
- 1 red bell pepper
- 1 avocado
- 200 g cherry tomatoes
- 1/2 red onion
- 1 dl fresh parsley
- 1/4 dl olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water. Cook the quinoa in a pot with water for about 15 minutes until it is tender and the water is absorbed. Let it cool.
2. Peel and dice the cucumber, red bell pepper, avocado, and red onion into small cubes.
3. Halve the cherry tomatoes.
4. Chop the fresh parsley finely.
5. Combine all ingredients in a large bowl.
6. Prepare the dressing by mixing olive oil, lemon juice, salt, and pepper in a separate bowl.
7. Pour the dressing over the salad and gently mix to combine.
8. Serve immediately or let it chill in the refrigerator before serving.
