A fresh and nutritious salad combining the flavors of shrimp, avocado, and nuts. Perfect as a light meal or side dish. Preparation Time: 15 minutes
Serving Size: 3 servings
Ingredients:
- 70 g mixed salad greens
- 1 avocado
- 100 ml apple (diced)
- 100 ml shrimp
- 75 ml walnuts
- Tarragon for garnish
Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp honey (optional)
- Salt and pepper to taste
Instructions:
1. Rinse the salad greens and tear them into bite-sized pieces.
2. Cut the avocado in half, remove the skin and pit, and slice it.
3. In a large bowl, combine the salad greens, avocado slices, diced apple, shrimp, and walnuts.
4. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the dressing.
5. Pour the dressing over the salad and toss gently to combine.
6. Garnish with tarragon before serving.
