This delicious shrimp croissant combines fresh shrimp, citrus freshness, and spices, creating an extra flavorful and satisfying dish.

Ingredients:
- 3 dl red wine
- 750 g shrimp
- Juice of 1 lemon
- Fresh parsley
- 2 celery stalks
- 1 dl oil
- 1 bay leaf
- 3 garlic cloves
- 2 dl fish stock
- 60 g green onions
- 4 tomatoes
- 4-5 dl rice
- 1½ tbsp creole seasoning
- 4 spring onions
Instructions:
1. Heat the oil in a large pan over medium heat. Add the chopped celery, garlic cloves, and green onions. Sauté until they are soft.
2. Add the shrimp to the pan and cook until they turn pink.
3. Pour in the red wine and fish stock. Add the bay leaf and creole seasoning. Simmer on low heat for about 10 minutes.
4. Stir in the chopped tomatoes and lemon juice. Allow to simmer for another 5 minutes.
5. Cook the rice separately according to package instructions.
6. Serve the shrimp mixture over the rice and garnish with fresh parsley.
