A tasty and wholesome option for lunch or dinner, these easy-to-make vegetable patties are perfect served on a salad bed.Preparation Time: 30 minutes

Ingredients:
- 1 cup dried chickpeas (or 1 can, drained and rinsed)- 1 carrot, grated
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup rolled oats
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
1. If using dried chickpeas, soak them overnight and cook until tender. Drain and rinse.2. In a bowl, combine the chickpeas, grated carrot, red onion, garlic, rolled oats, and spices.
3. Form the mixture into patties.
4. Heat the olive oil in a skillet over medium heat.
5. Cook the patties for about 5-7 minutes on each side, until golden brown.
6. Serve warm with salad or bread.
