Ingredients:
- 2 medium zucchinis - 2 ripe avocados
- 1 clove garlic
- 1/2 chili (seeds removed)
- Juice of 1 lime
- Salt and pepper to taste
- Fresh basil or other herbs for garnish (optional)
- Olive oil (optional)
Instructions:
1. Start by making the zucchini noodles. Rinse the zucchinis and slice them into thin strips using a vegetable knife or spiralizer. 2. Prepare the avocado sauce. In a bowl, combine the avocados, crushed garlic, chili, lime juice, salt, and pepper. Blend until smooth.
3. Heat a bit of olive oil in a pan and quickly sauté the zucchini strips for about 2-3 minutes, until they are slightly softened. Avoid overcooking to keep them from becoming mushy.
4. Remove the pan from heat and mix the zucchini noodles with the avocado sauce.
5. Serve immediately and garnish with fresh herbs if desired.
