Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 ripe avocados
- 2 cloves garlic
- Juice of 1 lime
- 50 g fresh basil
- 50 g Parmesan cheese (grated)
- Salt and pepper to taste
- 2 tbsp olive oil
- Nuts or seeds (e.g., pine nuts) for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente.
2. Prepare the avocado sauce: Halve the avocados, remove the pits, and scoop the flesh into a bowl. Add crushed garlic, lime juice, basil, salt, and pepper. Blend until smooth.
3. Drain the pasta and reserve a bit of the cooking water. Add the pasta to the bowl with the avocado sauce.
4. Mix well and add a splash of reserved cooking water if the sauce is too thick.
5. Stir in the grated Parmesan cheese and olive oil, mixing again.
6. Serve immediately, garnished with nuts or seeds.
