This fresh and delicious salad is perfect as a light meal or side dish.

Serving Size: 4 servings
Ingredients List:
- 200 g mixed salad greens (e.g., iceberg lettuce, arugula, spinach)
- 1 cucumber
- 2 tomatoes
- 1 avocado
- 100 g feta cheese
- 50 g pine nuts (toasted)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the mixed salad greens and drain well. Place them in a large salad bowl.
2. Peel and slice the cucumber, chop the tomatoes, and dice the avocado. Add all the ingredients to the salad bowl.
3. Crumble the feta cheese over the salad.
4. Lightly toast the pine nuts in a pan until golden brown and sprinkle them on top of the salad.
5. Mix the olive oil and balsamic vinegar together, seasoning with salt and pepper. Pour the dressing over the salad and gently toss to combine.
6. Serve immediately.
