Grated Salad with Delicious Dressing

Ingredients:
- 3 carrots
- 1 rutabaga
- 1 green apple
- Lemon juice (to taste)
- Red cabbage
- A few coriander leaves
Dressing:
- ½ tbsp peanut butter
- 2 tbsp lemon juice
- 2 garlic cloves
- ½ green chili
- 1½ tbsp soy sauce
- 1 tbsp syrup (such as date syrup)
- 2 tsp sesame oil
- 1 tbsp apple cider vinegar (or other light vinegar)
- 2 tbsp orange juice
Instructions:
1. Grate the rutabaga, carrots, and green apple separately. Add a little lemon juice to the apple to prevent browning.
2. Slice the red cabbage into thin strips.
3. Combine the grated vegetables and red cabbage in a bowl.
4. Prepare the dressing: Blend all dressing ingredients until smooth.
5. Serve the dressing on the side with the grated salad. If the dressing is too thick, you can add a splash of water.
6. Garnish the salad with a few coriander leaves before serving.
