A delicious hamburger sauce inspired by remoulade, perfect for rye burgers or other dishes. This sauce is tangy, rich, and balances salty and sweet flavors.
Preparation Time: 15 minutes
Serving Size: Approximately 200 ml

Ingredients:

- 1 egg yolk
- 2 tsp Dijon mustard
- 150 ml canola oil
- About 1 tbsp apple cider vinegar
- About 1 tbsp tomato paste
- 1 small shallot
- 1 garlic clove
- About 2 tbsp capers
- 1 tsp sugar
- Salt to taste
- A pinch of cayenne pepper

Instructions:

1. In a bowl, combine the egg yolk and Dijon mustard.
2. Slowly drizzle in the canola oil while vigorously whisking until the mixture emulsifies into a mayonnaise.
3. Peel and finely chop the shallot and garlic. Chop the capers as well.
4. Add all the ingredients to the emulsified mixture and mix well.
5. Taste and adjust the flavors as needed by adding salt, sugar, or vinegar.
6. Let the sauce sit in the refrigerator for at least 30 minutes to allow the flavors to meld. The sauce keeps in the refrigerator for at least a week.
