Delicious roasted carrots served with a whole grain sauce flavored with orange, mustard, and honey. A perfect side dish or lighter main course.

Ingredients:
- 500 g carrots
- 2 tbsp olive oil
- Salt to taste
- 1 orange (zest and juice)
- 1 tbsp mustard
- 1 tbsp honey
- 100 g whole grain rice (optional)
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Peel and chop the carrots into desired sizes.
3. Place the carrots in a bowl, add olive oil and salt, and mix well.
4. Spread the carrots on a baking sheet and roast in the oven for about 20-25 minutes, until they are tender and have a nice color.
5. Prepare the sauce: In a bowl, mix together the orange zest, juice, mustard, and honey.
6. Once the carrots are ready, pour the sauce over them and gently toss to combine.
7. Serve warm, optionally with whole grain rice.
