- 3 carrots

- 1 green apple
- Lemon juice
- Red cabbage

Dressing:

- 2 tbsp lemon juice
- 2 garlic cloves
- ½ green chili
- 1½ tbsp soy sauce
- 1 tbsp syrup (e.g., date syrup)
- 2 tsp sesame oil
- 1 tbsp apple cider vinegar (or other light vinegar)
- 2 tbsp orange juice
Instructions:
1. Grate the kohlrabi, carrots, and green apple separately. Add a bit of lemon juice to the apple to prevent browning.
2. Slice the red cabbage into thin strips.
3. Combine the grated vegetables and red cabbage in a large bowl.
4. Prepare the dressing: Blend all the dressing ingredients until smooth. Omit the chili if you prefer a milder flavor.
5. Serve the dressing alongside the grated vegetable salad. Garnish with cilantro leaves if desired.
