A refreshing and nutritious quinoa kale salad, perfect for fall, combining delicious superfoods. Preparation time is only 30 minutes, serving 4.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 cups kale, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water in a strainer. Cook quinoa in water for about 15 minutes until tender and the water is absorbed. Let it cool.
2. In the meantime, massage the kale with olive oil until it softens slightly.
3. Mix the cooled quinoa with the kale, cherry tomatoes, red onion, and feta cheese.
4. Prepare the dressing by mixing olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss well.
5. Serve immediately or let the flavors meld in the refrigerator for about 30 minutes before serving.
