Grilled Halloumi-Pineapple Wraps

Serving Size: 4 wraps
Ingredients:
- 200 g halloumi cheese - 1 ripe pineapple (or 1 small can of pineapple)
- 4 tortilla wraps
- 1 avocado
- 1 dl arugula or other salad greens
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lime juice (optional)
Instructions:
1. Slice the halloumi cheese into approximately 1 cm thick pieces. 2. Peel and cut the pineapple into slices.
3. Heat a grill or grill pan over medium heat and add a little olive oil.
4. Grill the halloumi slices for about 2-3 minutes on each side until they are beautifully golden brown.
5. Also grill the pineapple slices for a few minutes until they have nice grill marks.
6. Lay the tortilla wraps on a plate and top with arugula, grilled halloumi, grilled pineapple, and sliced avocado.
7. Season with salt, pepper, and lime juice if desired.
8. Wrap tightly and enjoy immediately while warm!
