A delicious and aromatic green chicken curry made with coconut milk and vibrant vegetables. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g chicken breast fillets
- 2 tbsp green curry paste
- 400 ml coconut milk
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, sliced
- 150 g green beans
- Juice of 1 lime
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and crushed garlic, and sauté until soft.
2. Cut the chicken breast fillets into strips and add them to the pan. Sauté until the chicken is cooked through.
3. Add the green curry paste and stir well to coat the chicken.
4. Pour the coconut milk into the pan and stir. Let it simmer on low heat for about 10 minutes.
5. Add the sliced bell pepper and green beans. Cook for another 5 minutes until the vegetables are tender.
6. Season with lime juice, salt, and pepper.
7. Serve the curry garnished with fresh coriander alongside rice or naan bread.
