Ingredients:
- 2 dl rice
- 4 dl water
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 1 carrot
- 1 dl peas (frozen)
- 2 tablespoons oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika powder
- 1/2 teaspoon curry powder
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Peel and dice the bell pepper and carrot into small cubes.
3. Heat the oil in a large pan and add the onions. Sauté for about 2-3 minutes.
4. Add the bell pepper and carrot, and cook for another 5 minutes until the vegetables soften.
5. Stir in the rice, mixing well to coat it with the vegetable flavors.
6. Pour the water into the pan and add salt, black pepper, paprika powder, and curry powder. Bring to a boil.
7. Lower the heat and cover the pan with a lid. Let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
8. Add the peas and gently mix. Let it simmer for another 5 minutes.
9. Serve garnished with fresh parsley.
