Ingredients:

- 300 g long-grain rice
- 500 g langoustines or other seafood
- 1 onion
- 2 garlic cloves
- 1 bell pepper (red or green)
- 400 ml fish stock
- 200 ml crushed tomatoes
- 1 tsp saffron
- 1 tsp smoked paprika
- Salt to taste
- Pepper to taste
- Olive oil for frying
- Fresh parsley for garnish

Instructions:

1. Peel and chop the onion, garlic, and bell pepper.
2. Heat olive oil in a large skillet or pan over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened.
3. Add the rice to the pan and stir well. Cook the rice for a few minutes until it becomes slightly translucent.
4. Pour in the crushed tomatoes and fish stock. Stir well to combine.
5. Sprinkle saffron and smoked paprika over the mixture. Season with salt and pepper. Let it simmer on low heat for about 15 minutes.
6. Place the langoustines on top of the rice and cover the pan with a lid. Cook for an additional 5-10 minutes, until the seafood is cooked and the rice has absorbed the liquid.
7. Garnish with fresh parsley before serving.
