A delicious and refreshing rice drink, especially popular in Venezuela. This beverage is spiced with cinnamon and vanilla, perfect for a hot summer day! Preparation Time: 12–24 hours (soaking time) + 1 hour
Serving Size: About 4–6 servings
Ingredients:
- 2 cups rice - 1 liter water
- 1 cinnamon stick or ground cinnamon
- 1 teaspoon vanilla extract or seeds from a vanilla bean
- A pinch of salt
- 1 can sweetened condensed milk
- Additional water or milk (if desired)
Instructions:
1. Soak the rice in water for at least 12 hours, preferably 24 hours. 2. Drain the rice and save the soaking water. You can grind the rice finely or leave it whole.
3. Place the rice in a pot, add 1 liter of water (soaking water + additional water to total 1 liter), and add the cinnamon stick.
4. Cook the rice over low heat for about 35 minutes, until fully cooked. Add water as needed to prevent the rice from drying out.
5. Allow the rice to cool, then transfer it to a blender. Add the sweetened condensed milk and fill the can twice with water, adding that as well.
6. Add salt, vanilla (or almond extract or lemon zest), and blend until the drink is smooth and creamy.
7. If the drink is too thick, add a little more water.
8. Pour the chicha into a glass or pitcher filled with ice, and sprinkle with cinnamon before serving.
