Riisi Munakoiso (Patlicanli Pilav)

A delicious Turkish rice dish featuring eggplant, perfect as a side or main course. Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 1 medium eggplant
- 3 dl rice
- 2 tsp tomato paste
- 1 tbsp butter
- ½ dl oil for frying the eggplant
- 1½ dl water (or enough to cook the rice)
- Salt to taste
- Black pepper to taste
Instructions:
1. Rinse the rice in cold water and soak it for about 30 minutes.
2. Cut the eggplant into cubes and sprinkle with salt. Let it sit for about 15 minutes, then rinse and dry the cubes.
3. Heat the oil in a frying pan and add the eggplant cubes. Fry until golden brown and soft, then set aside.
4. In a pot, melt the butter and add the tomato paste. Sauté for a moment, then add the rice. Cook the rice for a few minutes until slightly translucent.
5. Stir in the fried eggplant with the rice and mix well.
6. Add the water, salt, and black pepper. Bring to a boil, then reduce the heat. Cover the pot and let the rice cook for about 15-20 minutes, until the water is absorbed.
7. Remove the pot from heat and let it sit covered for a few minutes before serving.
8. Serve warm as a side dish or main course.
