A delicious Japanese dish featuring grilled eggplant topped with sweet miso paste. Perfect as a side dish or a hearty option with rice. Preparation Time: 30 minutes

Ingredients:
- 1 small eggplant
- 1 tablespoon sesame oil
- 2 tablespoons sake
- 2 tablespoons miso paste
- 2 tablespoons sugar
- 1 teaspoon sesame seeds
Instructions:
1. Slice the eggplant in half lengthwise.
2. Score the flesh of the eggplant with shallow crisscross cuts to enhance flavor absorption.
3. Heat sesame oil on the grill or a pan over medium heat.
4. Grill the eggplant cut side down for about 10-15 minutes, until soft and beautifully charred. Carefully turn the eggplant over.
5. In a bowl, mix miso paste, sugar, and sake until smooth.
6. Spread the miso mixture over the grilled eggplant and grill for an additional 5 minutes, until slightly caramelized.
7. Sprinkle sesame seeds on top before serving.
