A deliciously smoky grilled eggplant served with a flavorful garlic sauce and fresh herb salsa.

Ingredients:
- 1 large eggplant
- 4 garlic cloves
- 1 dl olive oil
- Juice of 1 lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl fresh herbs (e.g., parsley, cilantro)
- 1/2 dl white wine vinegar
- 1 tsp honey
Instructions:
1. Slice the eggplant and place the slices in a colander. Sprinkle salt over them and let sit for about 30 minutes.
2. Rinse the eggplant slices under cold water and pat them dry with paper towels.
3. Prepare the mojo de ajo by blending garlic, olive oil, lemon juice, salt, and black pepper in a blender until smooth.
4. Grill the eggplant slices on a hot grill for about 4-5 minutes on each side, until tender and marked with grill lines.
5. Make the salsa verde by blending fresh herbs, white wine vinegar, and honey in a blender until smooth.
6. Serve the grilled eggplant slices drizzled with mojo de ajo sauce and topped with salsa verde. Enjoy!
