Ingredients:
- 1 kg fresh blue mussels - 100 ml white wine
- 2 tablespoons olive oil
- 1 garlic clove, crushed
- 100 ml fresh parsley, chopped
- 100 ml fresh basil, chopped
- 1 tablespoon capers, finely chopped
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions:
1. Rinse the blue mussels under cold water and remove any beards. 2. Heat the olive oil in a large pot and add the crushed garlic. Sauté for a moment.
3. Add the mussels to the pot and pour in the white wine. Cover the pot with a lid and cook for about 5-7 minutes until the mussels open.
4. Meanwhile, prepare the salsa verde by mixing the parsley, basil, capers, lemon juice, salt, and pepper in a bowl.
5. Once the mussels are ready, transfer them to a serving platter and pour the salsa verde over them.
6. Serve immediately with fresh bread.
