Instructions:

1. Peel and chop the potatoes into bite-sized pieces.
2. Halve the cucumber and scoop out the seeds with a small spoon. Cut the cucumber into small cubes.
3. Dice the avocado and finely chop the green onions.

5. Gently mix in the salsa verde using two spoons to lift and combine.
